    Quick update... I have only brewed two days so far (backlog of full fermentors prevented us from doing much more). All I can say is that it has been a blast so far! The concepts are obviously the same as homebrewing, but the details of the process are tricky to pick up. 1,000 lb grain bills...

    I did the exact same thing! Volunteering and lots of homebrewing led to this opportunity for me. If you are really interested in brewing professionally, I think learning as much as possible (including brewing a bunch, reading everything you can, and thinking outside the box and doing things...

    The beer is still in a tertiary fermentor right now. We put it in a secondary and decided the flavors were pretty mellow so put it on 7 oz. of cocoa nibs and 4 oz. bitter orange peel (yeah, I know, that's a lot). Airlock was still bubbling every 10 seconds or so and gravity had dropped a touch...

    House Rules for Brewing

    I always drink a bottle of the previous batch while brewing the next one. Then, during the boil, I add a small splash of that beer meaning that the beer I have most recently brewed has a very small amount of every beer I have ever brewed.
