    When do you add salt, gypsum, baking soda, etc?

    I have been building my water the night before. I just watched the latest Chop & Brew and Dawson Butonized his water in his mash tun. Is this advised or am I better off continuing doing it before I add the water to the mash? Cheers!

    I only have two kegs and I want to age this for another 3-4 months and that would mean only one beer on tap until the RIS is done. There is a layer of CO2 on the secondary, but wont some O2 get splashed in there with the cubes?

    I racked to secondary 4 months ago and I want to add some oak cubes. I am concerned with oxygenation. I can not think of a way to add the cubes with out some splashing. Any thoughts? I am trying to avoid racking it again before kegging. Cheers!

    I would think that most of the yeast and proteins will settle out in 6 months. What temperature will you be storing your beer? If I were to add Biofine, it would be after the 6 months. Let the natural settling take out most of it and then let the Biofine clean up what is left. Hope this...

    All-Munich is okay, right?

    There is enough diastatic power in Munich Malt to convert itself. You can check the specks on the malt. Look at who made it and you can go online and check it or ask your hbs for the diastatic power of the malt. I believe that you need greater than 30 Lintner.
