    disappearing funky cheese-kettle sour

So I did a kettle soured gose over the weekend and had a very interesting smell overtake my entire house. Funky as a sumbitch Parmesan cheese. I used Swanson's L. Plantarum pills and a few scoops of a yogurt containing L. Bulgaricus, L. Thermophilus, L. Acidophilus, L. Casei, Bifidus. Hit my...

    Electric brewery alternative

Anybody have any of the other brands? Looking for a completed controller possibly cheaper than Kal's. Saw this new one on IG. https://brewpanels.com/

    L. Plantarum band aid smell

So I did a few small test batches last week with distilled and untreated (by me) tap water. I'm fully convinced chlorine is the culprit. Band aids in the tap water batch and sweet, lemony, lactic tartness in the distilled. Same in every way except for water. I'll never use my untreated tap water...

    L. Plantarum band aid smell

I'm thinking chlorine is my problem here too. The water in my town is notoriously bad for brewing. Lots of chlorine, unusable mineral profile. I don't want to wait until next time I brew a gose to figure this out so I'm going to set up an experimental batch tonight with 100% distilled water and...

    L. Plantarum band aid smell

I've read more recently that L. Plantarum does well at lower temps than other lacto strains but had consistent success for a while at 100 deg so I just kept the course. I'll definitely give lowering the temp a try. Just toss them right in, huh? I didn't think that would work very fast. Just...

    L. Plantarum band aid smell

Thanks. Nothing has changed. Same DME, same bottle of lacto pills I've been working through for a while. The only variable I can think of could be the water. I usually use untreated tap water for starters. I've read too much chlorine/chloromines can contribute to phenols. In fact, the word...

    Too hot AFTER fermentation?

Update...Beer tastes great. In fact, we now call it hot stout and plan to duplicate the process. I'm thinking it just rapidly aged it. kind of helpful on a big stout.

    L. Plantarum band aid smell

I can't seem to find anything fitting my questions in the archives so I figure I'll ask. I make a "starter" with DME and L. plantarum probiotic pills, held at 100 deg, no stirring, for two days for a lacto base for goses and BWs. It works great...usually. After 48 hours it smells sweet, lemony...

    Too hot AFTER fermentation?

I just had a similar problem occur. I'm having abut as much luck as you finding out if it will be OK. Long story short, a controller mistake caused me to heat my vessel to 120F. Fermentation was long done and it smells fine but being in plastic I'm worried about how safe it is to drink the beer...

    humidity level in fermentation chamber

Hello all. I rarely post here mostly because I always find what I'm looking for through search. Thanks for that by the way. I ferment in a controlled chest freezer and always have moisture build up issues. Usually a wipe down and dry out session does the trick but sometimes it causes mold...

    home-made temp controller

I'm wanting to try fermenting a lager in my currently empty chest freezer. Are the commercially available controllers worth the $80-$100? Being an electrician, I'm thinking I can make my own controller with a thermostat and a RIB relay for 10% of the cost of one of these. Has anyone ever tried...
