I've heard of some people putting their fermenting in large plastic tubs, freezing water bottles, and putting a wet towel or shirt over the top. I guess you have to replace the frozen water bottles a couple times a day though.

Do the d-rest right before you transfer to your secondary. Let your primary sit at room temperature for 24 to 48 hours then transfer to secondary. Let it ferment at 33 to 38 degree temps for a few months.
Sounds like a good idea to transfer into another carboy and let it sit for a week if I don't want puree to make it into any bottles. Thanks for the advice.....
