    Fermentation Cooler//keeping beer cool in summer!!

    I've heard of some people putting their fermenting in large plastic tubs, freezing water bottles, and putting a wet towel or shirt over the top. I guess you have to replace the frozen water bottles a couple times a day though.

    You could get a plastic crate or build a wood step sort of thing to put on your counter. Put the bottling bucket on top of it and fill away.

    Diacetyl rest

    Do the d-rest right before you transfer to your secondary. Let your primary sit at room temperature for 24 to 48 hours then transfer to secondary. Let it ferment at 33 to 38 degree temps for a few months.
