    cure?

While I'm a little late to the conversation, let me add what I know. My grandfather made his living as a sausage maker (smoked German sausage) and the family recipe has been passed down. I'm now the family sausage maker (hobby only). If you plan on making a slow smoked/cooked sausage at low...

    End of School Year IPA

So we had our end of the year staff party and this IPA was a hit! Being the end of school, named it Alice Cooper IPA. Served this and a keg of Cream of 3 Crops. Both came out great. Lots of "You made this?" and "This is homebrew?" comments. The IPA isn't heavily hopped but did dry hop with 2oz...

    End of School Year IPA

Thanks for the replies. Yes, I plan on dry hopping just forgot to add that in. As for the Crystal, yes, I was going for a little sweetness to the final product. The last (and only IPA) I made was a Stone IPA clone and it had 11 lbs. of pale 2 row and .75 lb of Crystal 20. When I compared my...

    End of School Year IPA

    Looks like I'll be using US05. I was mistaken, instead of the 04, I had a 06.

    End of School Year IPA

Designing my first IPA. What are people's thoughts? The mix of 10L and 60L Crystal is because I don't have any 20 or 40L. Also not sure on yeast. 1028 is the only liquid yeast I have. I have US04, US05 and Nottingham. This is a 5.5 gallon batch. 11 lbs Pale Malt (2 Row) 12.0 oz...

    Other NW Breweries?

Just got back from Yakima last night for State Basketball. While there, I stopped by Bale Breaker brewery. Had a sampler of their Field 41 pale ale, Topcutter and Bottomcutter IPAs, as well as the Dormancy Breakfast Stout. All four were very tasty. Bale Breaker goes heavy on the hops flavor...

    Other NW Breweries?

Yes, I'm only about 45 minutes from there. We don't head over there very often though. I may grab a buddy and check it out when this damn winter and snow stops as I have to go over Loup Lout pass. Yes it's snowing now as I type... so tired of this crap!

    Other NW Breweries?

Living in Northcentral WA doesn't give me a lot of opportunities to get out to Breweries. Tasting however, I'm pretty fond of the beers coming out of Ironhorse Brewery in Ellensburg. Irish Death, Mocha Death, Farmlandia and High Five Hef are all very good beers in my opinion.

    Stall questions

Thanks guys, I went back and checked with my hydrometer. Forgot about refractometer not working with alcohol present. Had in my mind when carbonation present. Yes, it's down to 1.012 for an ABV% of 5.90. Target final FG was 1.009 so I'm pretty close. The OG was 6 points higher than target...

    Stall questions

I did an all grain 5.5 gallon Cream of three crops ale on 2/15. My post boil OG was 1.057 using a refractometer. Just now I checked and it's only down to 1.030. The refractometer was new at Christmas and I calibrated it then. Grains 7 lbs. 2 Row Pale Malt US 2.5 lbs. Corn Flaked .75 lbs...

    My 1st All Grain batches

So I checked the gravity on both today. The Breakfast Stout: The target OG was 1.064 with a target FG of 1.019. OG after the Boil was 1.054. Gravity after 9 days is 1.018 giving me an ABV of 4.72. The Stone IPA Clone: Target OG 1.061 with a target FG of 1.013 OG after the Boil was...

    ghetto brew setups?...

Just did my first all grain brews this weekend. The keg I've had just sitting around for years, the blue cooler was given to me new but I had to buy the orange one. I need to redo the wood on the small saw horses as you can't see how the bottoms are rotten. Anyway, this set up worked. Turkey...

    Getting started on Keezer

The rest of my supplies came in and I've at least been able to hook up the old regulator to test it. Thankfully after sitting for over 20 years, no leaks. Have a keg doing a final soak and will transfer my cream ale over after football game tonight. It's been chilling in the carboy. Hope to...
