All grain only. Never owned a pack of Alpha-Amylase, It's in the grain ya know. Brewing with lime stone cavern spring water from my well. I malt my own grains. Age with 50-year-old White Oak from my land. No Mr. Kool-Aid style fake flavorings or essences. No Cane sugar. Hops are limited to 2 complimenting types max per brew.
