I'll take a look at the links and do some more research. I wondered about using the flaked oats for that creamy mouth fell, but wondered about the mash issue. I'll look into the Dextrin Malt though.
Thanks for all the good info everybody. I'll definitely update when I get this puppy off the ground.
So, I have this idea for a Wheat beer with strong citrus and vanilla tones, akin to a Dreamsicle popsicle. I'm shooting for extract with steeping grains in a 5 gallon batch. This is what I came up with:
5 lb. Briess Golden Light DME
Steeping Grains:
1.25 lb Flaked Wheat

I have run plastic through my dishwasher on sanitize and have never suffered from melted plastic; however, that doesn't mean the risk isn't there. If you plan to do it, I would keep the plastic parts away from any heating elements in the washer just to be safe.

This last Saturday I picked up a packet of Wyeast 3787 Trappist at my LHBS and it was only two days old.

Here's my label for my first brew: an English Brown Ale. The recipe used fuggles hops, so I thought the name was appropriate enough. :)

It will be two weeks tomorrow. The bubbling is extremely slow (like once every few minutes) and I've been testing for gas production by pressing on the lid of my bucket to drop the airlock down. I've opened it once for a gravity reading and it was just a couple points above the specified FG, and...
I've had my first brew fermenting for two weeks now (planning to go at least three if the yeast decide to be finished by then) but wondered if CO2 production ever ramps completely down, even when the yeast are performing "clean up duties".
I'm not deciding the fermentation is complete when...
More than likely everything is okay if your bucket is being kept in a clean area that doesn't have a lot of particulate matter in the air.
If you pitched the yeast and they started working within the first 24 hours, enough CO2 is probably being released to make a cushion between the wort and...
