what yeast are u using ... 1.120 is very high gravity ... i just started a 1 gallon batch yesterday and the tenps are in the 50's but its going strong ... try Lavlin EC-1118 i've never seen such a strong ferment before :)
will rack the peach/pear onto another 1 lbs honey in about a week lol i didn't have enough honey so substituted sugar to get it going. haha thats prob why it started so fast lol worried about blow-off its going so good. got it in a bucket to catch blow-off ...
woohoo! added 1/4 tsp Diammonium phosphate to the cinn/ginger and wow it took off with renewed activity! Almost got all the supplies for the 3 gallon blueberry batch, still waiting for the K1V-1116 yeast. Gonna go 12 lbs clover honey in 3 gallons with 2 lbs frozen berries ... might finish...
I've got some Glucosamine Sulfate ... fed the cinn/ginger a little bit seems to have helped :) also going to get some brewers yeast from local health food store as a supplement for the little yeastie buggers lol they are hungry. Cinn/ginger still going strong :)
keep it simple lol i have a hella hangover from barley pops but plastic is ok as long as it is not damaged (scratches and the like) yum yum i have EC1118 and K1V1116 on the way. woohoo gonna use the ec for grapalicious and the K1V for blueberry.
k i'm no expert but a slow start is not unusual esp at the temps u r having, i have a cinnamon/ginger mead going strong now but my temps inside house 40-50F
neway i shooting for a 3 gallon batch 2 lbs berry and 10 lbs honey is that gonna be enough? K1V is also a very agressive yeast and will probably eat it all ... how much honey for a sweet mead?
I believe that every organism evolves to meet its living condition so ... will a yeast adapt to its environment? i think yes. i will still wait for the K1V-1116 but i am going to keep a sample of my cinn/ginger yeast in case it turns out really f**kin good
q! how do the yeast producers avoid mutation? ... seems to me it is inevitable and can be a good thing/bad thing
