Am I the only one that feels like IPA and Pale Ale need to be broken out in the style guidelines? The reason I bring this up is I knew that the IPA style had "hazy" in it. I had no idea Pale Ale did as well. I got bit by that last night when I bought a six pack of a pale ale. I bought it...
It seems like figuring out what is causing your particular off flavors is the best first step. For me it was temperature co trolled fermentation.
I made my first batch in July and it was terrible. I made an immediate second batch in August or September. Terrible. The third batch was my...
I brewed this on Friday and pitched 2 rehydrated packets of us04. Saturday midday I was glad I had a blowoff rig attached. Really looking forward to this beer. Thanks!
Admittedly I don’t test conversion. When I first started doing all grain I did 152 mashes and if I was a little low I got full conversation regardless. Now that I’m aiming lower I’ll probably buy some iodine in case this happens again.
So my mash dropped to 146 by accident. I was shooting for 148. I added some hot water and now it is at 148. I have already mashed at the lower temp for an hour. The original plan was to mash at 148 for an hour then do 155 for 10 minutes. Should I start the hour over since it is at 148 now...
Oh I'm drinking it. I've been drinking it. It has already improved. It is basically a light bitterness in a yellow beer. A beer I'm sure you've had before from a can. :-)
Thanks all. I feel better it was the recipe and not me struggling with off flavor. I’ll probably run this again with a lot more cascade. I like the idea of SMaSH. I guess I’ll have to also look into a different base grain for a dry APA. It’s a fun hobby.
Kegging...I use an autosiphon. I recently invested in the SS brew bucket so I'll be able to eliminate the autosiphon potential issue on my next batches.
I am starting to think that has been my problem. I had read that you should ferment at the lower end of the yeast temp range for "cleaner" flavor. I guess that's not the case for US05. I also recently saw a post by Yooper saying the same thing you just did. Other yeasts like US-04 do benefit...
I have Beersmith2. I did use that. I guess I was thinking I'd get more flavor out of what I added in the flavor window. I haven't done this in a while so I'll try something else with a larger flavor and aroma addition. I enjoy the dryer west coast hoppy beers. I was going for dry with lower...
I am just getting back into the hobby after a 6 or 7 year break. I wanted to brew something simple since I was having off flavor issues with all my batches when I stopped. My off flavor issue tasted like too warm fermentation flavor. Any way here is the recipe I used to make a come back...

Just checked it again and it is still at 1.018. I raised the temp after you posted to 67. It has been there for 5 days. I would have thought it would have finished out Lower. I have a hard time believing it is finished given how it took off like a rocket then slammed to a halt. (I’m talking...
Yep. 1.018. Probably not done yet. I used rehydrated k97 And it is in my fermentation chamber set at 62. I would have thought based on how fast it took off and how vigorously it bubbled that it would be done. Guess not.
