I would suggest doing some Extract batches, before you jump to all grain. Extract are mostly dummy proof and you learn the process of what we need to do. I'm going on my 6th extract batch and still learning.
All Grain starts this summer for me. Do you live in the city or burbs?
DocScott, What's your take on the Flight 7Cs hops? Used them once for my IPA but didn't dry hop it; just about to move to a new place and have a larger space for brewing.. IPA is one of the first ones I want to redo.
I got one kit under my belt; then went to my local home brew store, talked with them about getting something together for my first non-kit batch. I tend take Palmer recipes and tweak them.. then talk to my local homebrew store and see if I am on the right track or completely wrong.
I'm taking the mindset of letting my darker beers sit longer; 2 months before I even bottle.. 1 month in primary; 1 month is secondary.. then at least 2-3 weeks in the bottles.
Also if you took good notes; look at what you can change and play around with it..
Ortho, Thanks for the tips; I did move the bottle closer to our heating system. I had them in our Sun Porch, which tends to be a little cooler. Moved them but, our APT tends to be closer to the higher 70's range.. We don't control our heat.

Backstory: Bottled my Oatmeal Stout on Dec 8th of this year; while going to bottle realized I didn't have exactly enough Priming Sugar. I was about 1/2oz off.. but everything was cleaned, wort moved to bottling bucket and lastly it was late so I decided how bad can it be?

As for Temp control; my wife and I are buying are first house.. the basement is getting used as my brewing pit.. temp control for sure.
Making a batch of an IPA; OG was 1060; yesterday transferred to my secondary then took a reading.. gravity was 1003???:confused:
Now I took the reading after I transferred it; not before.
