    I hadn't even thought about commercial brews. I wanted to attack this head on, but that sounds like a much cheaper alternative. Where to start? Are there specific commercial brews that I could use as example of hop varieties or should I brew it myself?

    I made a roasted chili ale by adding two roasted serrano and two anahiem chilis to an amber ale kit from lhbs. I have noticed that there is zero head. Has anybody else noticed that chilis kill head or should I be looking for another source?

    need brewing belt advice

    I have one, it is okay on glass. But it will make your beer ferment so warm that your ESB will have off flavors that my roommate determined are green olive, burnt green army man and bacon. Use it during winter, if you live in a VERY cold place.
