    Autumn Seasonal Beer Punkin' Ale

I don't remember the exact mash temp, but I think it was a little high. I have it sitting in a freezer with a temp controller set at 65 which keeps the liquid at 67. Is there any way to fix this?

    Autumn Seasonal Beer Punkin' Ale

Shoot! Looks like I have a stuck fermentation! Gravity is still at 1.037 (exactly the same as 7 days ago). The taste is good, but a lot sweeter than I would like. Any ideas? I used WLP001 fermenting at 67F for 3 weeks.

    Autumn Seasonal Beer Punkin' Ale

Brewed this 2 weeks ago and just checked on it. Gravity is at 1.037. Looks like it's gonna need another week or so. Airlock is still bubbling every 20 seconds.

    Autumn Seasonal Beer Punkin' Ale

Brewed a version of this on Friday. Used 1.25oz of Hallertau Mittelfruh @ 60 and 5. Also used 1tsp allspice, nutmeg and cinnamon @ 5 minutes instead of the pumpkin pie seasoning. Fly sparged to 6 gallons...1.060 post boil, 1.068 after adding 1lb brown sugar, 1.074 post boil at 5 gallons...

    Wood-Aged Beer Pirate Strong Ale

I actually added a little bit less than 10oz. My cousin and I are thinking about holding a little charity event and selling some homebrew to people in the neighborhood. It wont be until the end of next month so now I am actually thinking about bottling this to let it sit for a month and maybe...

    Wood-Aged Beer Pirate Strong Ale

Just racked my batch onto the oak chips/vanilla bean. Checked the gravity and its at 1.022. After having an OG of 1.092 this is perfect! Had a little taste and was pretty shocked at how much pineapple flavor there is. Really sweet. Hopefully the oak chips can balance this out! Can't wait to keg it!

    What are you drinking now?

Sour cherry ale that had Supplication dregs added and aged for 6 months. Pulled from my newly hooked up keg setup!

    Wood-Aged Beer Pirate Strong Ale

I went a little different route and used Captain Morgan Black rum (which is already aged in blackened oak barrels) with 4oz of toasted french oak chips. I poured about half the bottle into a jar with the chips. Its 47.3% so I'll most likely end up straining out most of the rum. As far as...

    Wood-Aged Beer Pirate Strong Ale

Just brewed this up on Saturday night. Ended up hitting 1.092 with about 4.5 gallons. Yeast is working away as I type. A few questions...Do you add in the rum with the oak chips or strain the rum out and just add the chips? I have never actually transferred a beer to a new carboy for the...

    Over pressurised keg regulator

I am having a similar issue. Even with the knob on my second valve turned all the way counter-clockwise (closed) the second I hook it up to my CO2 tank the low pressure shoots all the way up to 50psi and the pressure relief valve starts hissing. Bad regulator?
