I don't remember the exact mash temp, but I think it was a little high. I have it sitting in a freezer with a temp controller set at 65 which keeps the liquid at 67. Is there any way to fix this?
Shoot! Looks like I have a stuck fermentation! Gravity is still at 1.037 (exactly the same as 7 days ago). The taste is good, but a lot sweeter than I would like. Any ideas? I used WLP001 fermenting at 67F for 3 weeks.
Brewed this 2 weeks ago and just checked on it. Gravity is at 1.037. Looks like it's gonna need another week or so. Airlock is still bubbling every 20 seconds.

Just racked my batch onto the oak chips/vanilla bean. Checked the gravity and its at 1.022. After having an OG of 1.092 this is perfect! Had a little taste and was pretty shocked at how much pineapple flavor there is. Really sweet. Hopefully the oak chips can balance this out! Can't wait to keg it!
I went a little different route and used Captain Morgan Black rum (which is already aged in blackened oak barrels) with 4oz of toasted french oak chips. I poured about half the bottle into a jar with the chips. Its 47.3% so I'll most likely end up straining out most of the rum.

I am having a similar issue. Even with the knob on my second valve turned all the way counter-clockwise (closed) the second I hook it up to my CO2 tank the low pressure shoots all the way up to 50psi and the pressure relief valve starts hissing. Bad regulator?
