    The cidery flavor has completely gone away. This is a great beer.

    Weldless brew stand.

    This is my weldless stand. It's made of Super Strut from Home Depot. this pic is from last spring. It's not a HERMS anymore. I've added a panel and a RIMS tube to heat the mash.

    I brewed the same recipes from CYBI. I followed the Fullers fermentation regimen almost exactly due to the rebrew show going on about how important it was.     My dad has been talking about a similar sap idea of replacing some of the water in a porter recipe with maple sap. You might save this idea till spring and tap some birch trees instead.

    Chugger Pump seizing

    Well the pump was seizing again this weekend. It wouldn't loose prime, it just wouldn't pump. After about 5 mins of swearing like a drunken sailor I decided to take the head apart.     Bell's is my favorite. Really rich and munichy. Strong too. Warms me up very nicely after freezing all evening in my tree stand.

    Pitching the morning after and lag time. Thoughts?

    I do the same thing in the summer for lagers. I also aerate in the morning just to make sure the yeast are getting the O2 they need.
