    Reviving an old thread here... should be enough time for your quick sour saison to be tested. :-) ohhh... any updates on this? I'm doing a Saison that I plan to blend with either some flanders red or sour brown with plums I've got going. Not sure the ratio, but I don't want to drown out any...

    Sour Beer Bottling / Blending Questions

    A few questions re: sour beer. I'm aging a Flanders Red in a bucket right now. I know there is more oxygen transfer than a proper barrel and will likely get higher concentrations of acetic acid. I do want complexity, so will continue this method, and just try to head it off before it goes...

    Yeah! That's looking about right. Patience.. ya, you and me both. After bottling mine and feeling a little disappointed I stuck mine away for about 4 months. Cracked a bottle last night. Wow! Delicious. So, even after everything seems finished.. patience patience patience!

    I have this reaction with Unibroue beer. La Fin Du Monde, Maudite, and Terrible. I can make it through Terrible if I wait about 10 min for the symptoms to subside before continuing on drinking. The only other beer with similar suvere reactions is delirium tremens. For it I get severe stomach...

    Thanks for this recipe. I'm going to be giving it a try next. I have a few questions though. 1. I'm thinking of using one of the packaged Lactos rather than the homemade starter. It was on sale at the beer shop I go to. Do you think I would have better results if I created a starter with it...
