    I just realized what might help me next time: stir during mash. Just read on John Palmer's website that you need to stir the mash ever 15-20 minutes. I guess I thought that mash was like bbq: if you're lookin you aint cookin. Ill try more stirring next time.

    I wonder why, after three successful batches, I get this. Makes me want to invest in a refractometer. That way I could take immediate action. Maybe I should try stirring more, or maybe sparging in two steps vs one.

    your original recipe is for 5.5 gallons. I am doing 2.5 gallon batches. How far do you think I will be off if I simply cut your recipe in half?

    Thanks for all the advice. I might just try the aquarium heater sometime. Shouldn't be that hard to do it, especially since I am fermenting 2.5 gallon batches. But, I will probably try at lower temps first since most of my extra cash goes to malt, hops, and yeast...... and of course a few...

    I want to brew a saison next week, but my house stays around 68. I know saison yeast does its thing at higher temps. Will it still perform and turn out a good beer if I ferment at the lower end of the temp range? Thanks
