Default All-Grain - New World Wheat Beer

Batch Size (Gallons): 11
Original Gravity: 1.047
Final Gravity: 1.010
IBU: 20.3
Boiling Time (Minutes): 60
Color: 4
Primary Fermentation (# of Days & Temp): 7 Days @ 65F
Additional Fermentation: None
Secondary Fermentation (# of Days & Temp): 7 Days @ 70F
Tasting Notes: Very clean, light on the hops, perfect session beer and crowd pleaser

As much as I like my Summer Citrus Wheat, I think this one is better and is cheaper to make. It uses German noble hops for a clean and dry bittering that really compliments the Wyeast 1010 American Wheat yeast strain. Carbed up to about 2.4vols this has a great carbonic bite, very light hop character, and a clean finish. It's a great session beer and is a welcome companion to anything you're doing outside in the 100 degree summer heat! This recipe is for an 11 gallon batch, and I chose to pitch Kolsch yeast in one carboy and Wheat in the other just for kicks.

0.50 lb Caramel/Crystal Malt - 15L (15.0 SRM) 2.86 %

Hops
60 min 1.00 oz Sterling [7.50 %] (60 min)
30 min 1.00 oz Tettnang [4.50 %] (30 min)
5 min 1.00 oz Tettnang [4.50 %] (5 min)

15 min 2.00 items Whirlfloc Tablet (Boil 15.0 min) Misc

Yeast
1 Pkgs American Wheat Ale (Wyeast Labs #1010)
1 Pkgs Kolsch Yeast (Wyeast Labs #2565)

Mash Schedule and Fermentation
Mash @ 150F for 75 minutes (light body)
Ferment @ 65F for 7 days, 70F for 7 days

Kegged @ 2 weeks, then chilled to 37F. Carb @ 30psi for 36 hours, then reduce pressure to 10psi for serving. Let condition for another 1 week, then enjoy!

"New World" sounds neat, but would indicate not using ingredients from the old world...yes, no?

Yes! All American Wheat maybe would have been a better label for it. It uses all North American 2-Row, White Wheat Malt and Crystal 15L. This beer is GREAT! It's not going to overwhelm your tastebuds with flavor, but then again it isn't supposed to. It's a delicate beer with a cleansing bitterness, but not one that hangs around on your palette. It's definitely malt forward and has just a touch of residual sweetness. Hop aroma is low, and almost non-existent at lower temperatures but gets more noticable as your glass warms up. It's a great lawnmower or session beer, and one that lots of different people can enjoy. The microbrew fans are all over it, plus my homebrewer friends, and the BMC crowd loves it too. Cheap ingredient cost is another reason I like brewing this beer; not including gas or water my ingredients run just under $30 for an 11 gallon batch.
