This is a really big malty beer that is my closest attempt to cloning Rogue's Mogul Ale. I like Wyeasts 1728 Scottish because it is very clean and malty, perfectly suiting this beer.
11 lbs Hugh Bairds
1 lb Crystal 60
1 lb Crystal 120
4 lbs Munich
1 lb CaraPils
1.5 oz Fuggles in the boil
1 oz Cascade and 1 oz Fuggles at 15
1 oz Cascade and 1 oz Fuggles at 5
The red color comes from the malt, no roast or dark malt added. There is a caramel richness that comes from the large amount of Crystal added. The Munich just adds to the overall maltiness.
Hops at 15 and 5 help to permeate the beer with their floral taste. This is not overly bitter but is very hoppy.
