I have guests so I may not get a picture of the finished dish.

Fillet of Arctic Cod wrapped in Sorrento ham in a Exotic mushroom and champagne sauce.
Served on a bed of butter cabbage and a purée of squash and sweet potato and a celeriac mash.




I have half a side of wild salmon that I need to use so I'm thinking of either fish cakes or thia style fish balls for starters. Not sure yet.

Cod and ham. That sounds fabulous. I'd pass on the sweet potatoes but lather the mushroom and champagne sauce all over the fish.

The sweet potatoe and squash along with the celaiac mash are only served in a couple of small islands. Just a spoonfull each.
