Very similar to the ones at bonefish grill

1 lb shrimp, shelled and deveined smaller shrimp works best
1/2 cup mayonnaise
1/4 cup Thai sweet chili sauce
3 -5 drops hot chili sauce, just a few drops
1/2-3/4 cup cornstarch, to coat the shrimp in

Directions:
1Mix mayo and sauces for coating.

2Bread shrimp in cornstarch.

3Deep fat fry the shrimp until lightly brown.

4Drain on paper towel, put shrimp in a bowl and coat with the sauce.

5Serve in a lettuce lined bowl, top with chopped scallions.
 
Made up a batch of these on Saturday night. I didn't care for the corn starch coating (it was ok but not my thing) the sauce I thought was awsome. We took some steak rolls and made a shrim poor boy with them and used the sauceas a mayo. Also thought the sauce was very good eating them on lettuce. All and all people at my house loved them. Thanks again.
 
i didnt create the recipe, i found it online and passed it on.

the recipe says smaller shrimp are better but i like the bigger ones better.

im also generous with hot chili sauce(sriracha), i dont find it to hot

The corn starch breading was LIFE CHANGING. It stayed crispy FOREVER!!!!! Even drenched in yummy sauce.

This is one of those recipes I have tasted, and had NO clue how to replicate. Doesn't happen to me much.

IT WAS A HIT!!!

I made my own sweet thai chili sauce (just google) EASY TO MAKE.

shrimped battered corn strach on their own isnt anything great.

gotta make sure they get a good frying coat, than fry good on both sides, than coat them in the sauce
 
Agreed, but perfect for sauce.

We did some more 2 nights ago in a spicy stir fry instyead of the mayo/thai.

They stayed crispy, and the corn starch thickened the sauce. Little crispy bits all soaked in sauce were here and there. AWESOME!

And actually, they were yummy plain (breaded in CS no sauce). I had to stop SWMBO and my kids from scarfing them all.
