I am doing a extract kit from NB. It's a dark cherry stout(I'll post ingredients below). My brew day went fine, perfect temps, no issues. Within 5-6 hours I was seeing fast bubbling from the air lock. The next morning I had 4" of crousin and yeast was going to town. Went I got home that night I had found that it blown off and had foam in the air lock and fermenting activity had slowed down. Room temps have been a steady 68 degrees. I have done several extract brews and never had an issue like this.

IT now has been 2 weeks and I took a gravity reading and its showing 1.020 reading. Normally within a week is see my FG. How do fix this??? Any help would be great.


O.G: 1053

Specialty Grains
* 0.5 lbs. Simpsons Dark Crystal
* 0.5 lbs. Simpson's Roasted Barley
* 0.5 lbs. Simpson's Black Malt

Fermentables

* 3.15 lbs. Dark Malt Syrup
* 3 lbs. Dark Dry Malt Extract

Boil Additions

* 1 oz. Argentina Cascade (60 min)

Yeast
* Safbrew S-33. Optimum temperature: 59-75° F.
 
The type of extract you used combined with the specility grains could contribute to a higher FG than you anticipate. If that isn't the case then you may look to your yeast pitching rate, aeration of the wort and the tempertures you fermented at.

Right now there may be nothing you can do other that try gently swirling your wort to try to get the yeast back in suspension if it has flocculated out and make sure your fermenting temps are in range for the yeast. Other that that, your brew may be finished.
 
Well, I aerated more then I had ever this go around, temps had been a perfect 68 degrees, and I nailed the 1.053 gravity... Uhhg what a bummer.
 
I brewed that same kit about 4 months ago and I too only got around 1.020 for a FG but it still tasted good and no bottle bombs

But do yourself a huge favor and don't use the cherry extract the kit came with. I used it on about 1/2 the bottles and the taste wasn't great. Use some cherry pureee or fresh cherries if you can. The ones without the cherry extract were alot better.
 
Then it just may be done. Depending on the type of extract you used, you may have gotten extract that is high in unfermentable sugars. Dark extract contains more unfermentable sugars than lighter coloured extract, and different manufacturers of extract use more/less fermentables in their recipie.

Alright...i will stop panicking then. I guess 3.7-% ABV will have to do....I tasted the sample and it's pretty good. I'm looking forward to drinking it :p
