How hard is it get all the o2 out of the headspace if I only rack 2 gallons into a corny? Plan to force carb. Can I just purge and burp a couple times and call it good or is there a trick to knowing all the o2 is gone?
 
Fill with water and push it out with CO2. What you are describing will only give you increasing levels of dilution and with that much head space it will take a lot of purging.

Because CO2 is heavier than air, theoretically you can accomplish it this way. In actuality, if you but your gas in through dip tube, you will have better luck with this.

That's about the only way to get a near 100% CO2 headspace, that large. Gases mix, and you can't lay down a CO2 blanket, even when bubbling through the dip tube. As a matter of fact it may increase oxidation as the foam is being exposed to the CO2/air mixture.
 
That's what I'll do then. I have a keg full of star san. I'll just push it into this one and then push it back out again. Kill two birds. I figured it would take forever by just the standard purging methods.
 
You could calculate or find someone else's math handywork on how many gallons of CO2 it takes to reduce 3.5 gallons of air to say 1% O2. The pressure of injected CO2 plays a role. So there's a break even point as the amount of headspace is being reduced.

If you had a vacuum pump it would be a different story.

And there's no need to kill birds. ;)
