So I'm brewing my first batch.. I actually drank the organic apple juice from my one gallon glass jug and mixed up my own concoction..
-1 gallon water
-1.75 cup brown sugar
-1.5 Tbsp honey
-3tbsp instant coffee
-5tsp ancho chili powder
-5tsp vanilla flavor
Cooked everything down for about 45 minutes, put it in my carboy, used 1/2 pack of champagne yeast(could have used 1/4 of the pack) put the air lock on it. (everything cleaned with a diluted peroxide solution.
It's been 5 days and it now looks like this with a bubble in my airlock every 10seconds.

Unfortunately the water in the air lock settled on the left side as you can see in this image(Nice bubble timing) Not Sure why it does this. Any one have ideas/answers?
Also I have some circular black dots floating on the top and sides, maybe 10 all together. What do you think, is this mold? Or just one of the ingredients clotting up?
