gratus fermentatio
Well-Known Member
I had a bottle of this yesterday & it went down so smooth, I had to share.
I didn't set out to age it 20 months, it just sort of worked out that way. The hops flavour & aroma had aged out, but it was quite tasty just the same.
Munich Graff
2lbs pale LME
2lbs caramunich (60L)
1lb two row
1.5 oz torrified wheat
3oz flaked oats
3oz (by weight) unsulphured molasses
Four 12oz cans frozen apple juice concentrate (thawed)
Two 12oz cans frozen white grape juice concentrate (thawed)
1.5 gallons water
1 teaspoon malic acid
3 teaspoons DAP
3 teaspoons yeast nutrient
3 teaspoons yeast energizer
5.25 gallons apple juice
0.7oz hops (I used leaf Perle AA: 7.2%)
Mash grain @ 155*F for 50 minutes
Boil 35 minutes, add hops at start of boil.
Add molasses at flameout.
Add wort to juice, the juice will chill the wort to pitch temp.
OG: 1.076 / FG: 1.010
Pitch Nottingham yeast & ferment cool (about 62-64*F.)
This is designed to be 6 gallons after racking.
Rack in 30 days.
Bulk age 20 months, then bottle.
It finishes a little sweet & should give you an ABV of about 9%
This goes down dangerously smooth & easy, you'll be feeling it before the end of a pint, it kind of sneaks up on you.
Regards, GF.
