Default Raw Honey

Im wanting to make a couple batches of mead but I wasnt sure if I needed raw honey or filtered pasteurized honey.

raw is the way for maximum flavors and aromas that get stripped by heating.

Generally, the fresher and less-processed the honey, the better the mead.
