Hey All,
I have a basic mead that I made from Midwest supplies:
http://www.midwestsupplies.com/midwest-dry-mead.html
I have let it age for around 18 months now. After first like expected it was very hot. It has calmed down considerably. I took a small sample to test various back sweetening methods (Honey, Sugar, Agave nectar). Each one tasted good, but the nose of it still smelled like it tasted over a year ago. I know I forgot about it some months and some air may have gotten into it when my airlock went dry. Would this be the cause? Also, anything I can do for it?
Thanks,
Greg
