I bought white grape concentrate online for a batch o wine. upon arrival i read on the box...preserved with sulphur dioxide

WILL IT FERMENT???

SO2 will not stop you. If you are really scared then mix up the must and wait 12-24 hours after mixing it up. The SO2 will gas off in that time but most likely you will not even need to do that wait unless you use Camden tablets.

Its going well. I'm doin a 3.5 gal batch of strawberry/banana.

Recipe
1 96oz can Vintners Harvest Strawberry Base
5# Bananas
1 ltr. White Grape Concentrate
5.25# Sugar
4 tsp Acid Blend
4 tsp SNAs
1 tsp tannin
1 1/2 tsp Pectic Enzyme
1/2 tsp Amylase Enzyme
1 pk Montrachet Yeast
(top to 3.75 gal)

I mixed everything and let it sit for 12 hrs. i pulled the bag o fruit and aerated the heck out of it. i took a pint out for a starter. rehydrated the yeast per package instructions. Pitched starter. 12 hrs later i added it to must. Today its chugging right along!

OG 1.070. (the juice from strawberry base diluted my must...will add more sugar in a day or so...i wanted .080
