Default Phat Tyre yeast

I am looking at making some Phat Tyre. The recipe recommends US-05 or WY 1762 (Begian Abbey II). I have US-05 on hand but I was wondering if WY 3522 (Belgian Ardennes) or T-58 (which I also have on hand) might work better. Any thoughts or experience?

Depends if you want a more neutral profile or Belgian characteristics.

I have my own fat tire clone recipe that I brew with US-05. I tried with a couple of belgian strains and I found that they were too belgian-y. Last time I had a fat tire close to the source I found it to have a faint belgian character that I couldn't replicate, so I settled on us-o5. Not perfect, but closer.

There's nothing Belgian about Fat Tire. The name of the brewery is New Belgium, but fat tire is an american amber ale. A good clean american yeast should be fine.

They bottle condition their cans, so you could use the real thing if you can find them. Sadly their bottling line filters the yeast, so thats not an option. I have only been able to find the bottles in my area.

What I would love to replicate is Fat Tire from a keg. So good!
