My Tripel is at 1.018 ... can I bottle?

I had it in the primary for a month.. secondary for 2 weeks.

According to the guidelines, a Tripel FG should be between 1.008 and 1.018.

So mine is on the higher end.


Should I use less sugar if I bottle?

Am I ok?
 
Your yeast are done producing CO2 at this point, to any significant extent. You should use whatever amount of sugar is recommended for a trippel based on the temperature and beer type; I would not worry about excess sugar after a month and a half of fermentation (I assume you are worried about exploding bottles?).
That said, leaving it in the fermenter another couple weeks isn't likely to hurt anything.
 
yeah, Im worried about bottle bombs..

I want to bottle today though so this will be ready by Christmas.

brewsmith said that the estimated FG should be around 1.017.. I was hoping on going on the higher end of carbination
 
6 weeks from brewday? You're probably good. How long have you gotten the 1.018 reading? If you got it repeatedly, you're golden.
 
the starting gravity was 1.081


I did end up bottling.. we'll see what happens.

There was something wrong with my auto siphon, so I ended up getting a ton of air in there. Not good.
