Default Pitching Yeast

Just got a rec kit today, and it came with dry yeast. In the instructions, it states to stir in yeast when the wort is cooled. I thought you were supposed to add the dry least to luke warm water THEN pitch it?? Should I be stirring dry yeast directly into the cooled wort?

In my experience it doesnt really matter...they will both ferment. Re-hydrated may just start faster.

I always rehydrate in warm water then add small amounts of wort to it to proff the yeast. I would want to know if the yeast is good or not prior to pitching into my wort.

If the yeast is getting close to the expiration date then rehydrate it in water and add a little wort like Brew-boy said, If the yeast is still really fresh just dump it in dry

You should always follow the manufacturer's directions. Some brands are meant to be rehydrated first, whereas the odd one is designed to be pitched straight into the wort.

If you fail to rehydrate when it is recommended, you risk pitching a lower quantity of viable yeast. Will it make a difference in your brew? It may not, but it depends on a lot of factors.
