Default pH of Weyermann & Castle Pilsner Malt

I tested Weyermann & Castle pilsner malt in distilled water and have the following results:

Weyermann Pilsner Malt = 5.80 (EZ Water uses 5.75 for pilsner malt, close enough). This is a pretty well known value.

Castle Pilsner Malt = 5.54

This difference is interesting and helps planning acid / alkalinity source for mashing.

The pH meter was a Hanna pHep5 with fresh 2-point calibration.

Every time I've measured Weyermann's it came in at right around 5.75. I have head or some Pilsner malts measuring as low as 5.6 but never as low as 5.54 but then I've never measured or even seen Castle. With a Hanna meter I suggest calibration, followed by measurement followed by a cal check (not a re-cal - measure the pH of the two buffers to see how close the measurements are to the actual buffer pH's at the observed temperatures). The inexpensive meters tend to be unstable.
