Looks like I should use munich profile. I actually never paid attention to this profile because I assumed it was too high in mineral content. Looks like a good profile to use.
 
The Munich profile has far too much alkalinity to produce a good mash for a Dunkelweizen. The 'boiled' Munich profile is much more likely to be closer to what the grist needs to produce a desirable pH.
