So I have been brewing extract for a year or so and have had pretty good results, so I'm wanting to try my hand at BIAB. I'm thinking my first venture into BIAB is going to be a SMASH recipe but don't know where to start w/ formulating a recipe. I'm not very familiar w/ the flavors of specific hops and malts and figure doing a few SMASH batches will be a good way to help refine my pallet.

What is your favorite SMASH recipe?
 
11 gallon batch
60min single infusion
60min boil

20# Marris Otter

2oz Amarillo (FWH)
.25oz Amarillo (20min)
.25oz Amarillo (10min)
.25oz Amarillo (5min)
.25oz Amarillo (Whirlpool 170*F) hold for 20mins

2pks US-05
Mash at 153*F

OG:1.060
FG: 1.010
Ferment at 64*F

This is awesome. It was my first SMaSH recipe I made last year. Since then I've made it all last summer and now I've decide to make this my summer beer. Appeals to almost every beer drinker. Screams tangerine and toast.

Floor malted MO
Simcoe or Glacier (depending on mood) at 15 min and FO
1.035
Mash high with faux decoction (boil down some of first runnings)
S-23 lager

What are the spec's on your hops in beersmith (AA%, BA% etc.)? My beersmith app doesn't have Falconer's Flight hops listed but I found another recipe w/ them in it and saved it to my hop list. It is listed at 10.5% AA%. My IBU's are way higher than your recipe w/ the same schedule so that's why I'm curious. FYI, I'm putting in my recipe list so I have quick and easy access to it, not trying to steal your recipe lol.

ETA: I screwed up. I missed that your recipe was for a 10 gallon batch, mine is setup for 5 gallon batches. as soon as I halved everything the numbers got much closer.
 
I made a 2-row/Cascade SMaSH recently that I really liked. For 5 gallons, it was 10-12 lbs of 2-row (can't recall exactly, but aim for around 1.050) and then an ounce of Cascade at 60, 15, 5, and dry hop 3 days before bottling.
 
So that gives me a few pale ale SMaSH recipes to try. I'm curious about a hef or wheat beer SMaSH. Can you use wheat for 100% of the grain bill? Would I still need to use rice hulls if I'm doing BIAB? What kind of hops would you use for a German style hef?
 
You can do a 100% wheat beer. Malted wheat actually has some decent enzymatic strength. I also do a brew in a bag, but I incorporate a batch sparge into the process to increase efficiency. I think you would benefit from rice hulls because even though you don't need to worry about a stuck mash, the gumminess of the wheat may prevent the richest wort from properly draining out of the bag.

As far as hops go, any of the noble varieties should work well for a German hef. Ex. Hallertauer, tettnanger

Thats cheating! Falconers Flight is a blend! :p

Vienna and Northern Brewer is a good one if you want something outside of the fruity hop flavor/aromas.

I have yet to do BIAB but was thinking I'd do a dunk sparge, is that the same as batch sparge? How much rice hulls should I add to the grain bill?

A half pound of rice hulls should probably do it. If you are going for a more traditional Bavarian hef, I like the second recipe better.. A little less ibus would be more true to style (then again true to style would include some pils in the grain bill). A dunk sparge is what I do. It is essentially a batch sparge because I stir the grains up then drain it and if I need more volume, I pour in some more hot water. Works pretty well... Usually get around 80% efficiency

Changed it to a half pound rice hulls. I love German hefe's as long as the banana flavor isn't over powering. Franziskaner is probably my favorite example. I am also a big fan of American wheats, that's the reason I put up the 2 recipes.
 
I love American wheat beers too, especially the hoppy ones. If you were going to attempt an American version, I would recommend using Amarillo hops. Shoot for around 25 ibus with generous late additions and dry hop it with Amarillo. Ferment with clean American ale yeast. The results are spectacular

Planning my first recipes after doing kits for the last year.

Thinking of Vienna and Tettnanger as my first smash :) looking for a kolsch-like something or other for summer, though Safale SK97 is evidently impossible to find now so probably will use US-05.
 
I've brewed SMaSH with all plain 2-row and loved it. I've brewed SMaSH with a proportion of home-toasted 2-row and loved it. I've brewed SMaSH with Vienna and loved it. The latter two are more complex, obviously, but just plain ol' 2-row and some hops makes a damn fine beer.

I'm not sure at all about your all-wheat idea. I think you'll end up with a mess and disappointment. I don't recommend it at all, no matter how much rice hulls you add. All-wheat mashes are specialized things requiring specialized techniques.
