I have a recipe for an extract NW Red Ale.
The recipe calls for:
1 1/4oz of Amarillo (bittering)
1 oz of Cascade (aroma)

my question is I have Cascade and Galena in my freezer, would I be fine substituting the Galena (~12%) for the Amarillo or will the higher AA make the final beer to bitter?

Thanks

Amarillo is around 8%, so just use .8 oz of Galena. Looking for 10 AAUs. Would a ounce of Galena make the beer too bitter? Depends on the OG and what you think is too bitter. Would certainly make it more bitter, but hard to tell if that would be too bitter. If you didn't want .25 oz of Galena laying around, you could use .5 oz at 60 min and .5 oz at 30 min.
