Hey guys! As a First time all-grain brewer, I was wondering if there are particular beers which are easier to make, or more tolerant of mistakes

Personally a nice hoppy APA is a good place to start if you enjoy them. Easy drinking, easy grain bill to sparge, and short conditioning time. Something like this using US05 should treat you well and you can sub the Chinook for something like Amarillo, Simcoe, Citra, or Centennial if you'd like....

Mash @ 152 for 60mins

9lb 2Row
1lb Crystal 40

Boil - 60min

1/2 oz Chinook @ 30min
1oz Cascade @ 15min
1oz Cascade @ 10min
1oz Cascade @ 5min
1/2 oz Chinook @ 5min

Dry Hop - 2oz Cascade + 1oz Chinook for 4-5 days

Dark beers are pretty easy because you don't have to worry about ph so much.

I recommend a German Alt. It was an easy transition to all grain for me.

A smash recipe is about the simplest you can do. I just sampled one I made a month and a half ago with marris otter and summit hops. Pretty tasty actually.

Or biermunchers cream of three crops is always a hit with non craft drinkers around here.

I suggest going BIAB with the KeyWestBrewing recipe. I'd also suggest a small 1 gallon batch to begin with.
