As a brewer from the UK I have relatively little experience of the IIPA style so I thought I'd come to the experts to critique my recipe.

I tried making the style a few years ago while still making extract beers and made an awful IIPA that became a decentish Barley wine after a year or so of aging....

This time I'm trying for a classic American IIPA, sorry units are in metric but I'll estimate a conversion on each one....

21l brew length 5.5 US gallons

6.5kg Pale malt 14.3lb
0.5kg Crystal 1lb
.1kg wheat malt 3.5 oz
.5kg sugar 1lb

Mash at 65C(149F) or so for 90 minutes

60 minute boil with

70g Chinook @ 60 minutes
60g Cascade @ 20 minutes
60g Cascade @ 1 minute

Ferment with loads of US-05

Dry hop with another 60g Cascade for 7 days after 14 days

That should give

SG 1.080
ABV ~9%
Bitterness 108 IBU
Colour 23 EBC
 
Here on the other side of the atlantic we like boat loads of late hop additions. All of my IPA recipes (imperial or otherwise) contain 15 min and/or 10 min additions. I'd suggest moving your 20 min addition to one or both of those times and adjust the amounts to maintain your desired level of bitterness.
 
Needs more hops. Take your recipe and add 60 grams centennial @ 15 and 5 minutes, each
 
More hops, I like more hops, I feel a trip to the homebrew shop coming up....
