Ok, I am brewing my Tripel tonight and I thought I had enough Northern Brewer hops for my 90 minute addition, but I dont. Can I use any hop foe this addition because all of the flavor and aroma would be boiled away in 90 minutes. I have cascade, chinook, mosaic in pound bags unopened and i have columbus and simcoe in pound bags open. Can I use the simcoe?

You are correct--virtually anything is fine for a 90 minute addition. If I were you, I'd use whatever is cheapest. That is likely Columbus. (Simcoe is high in AA, but expensive.) Up to you, though.

I think cascade would probably be the most neutral of the hops you listed for bittering, but I'd be more inclined to bitter with what was already open. Columbus is a good bet.
