If I am doing 2.5 gallon batches, can I use half a pack of yeast and save the rest?

Dry yeast? Yeah, some people staple the package back shut (although to me it's worth $1.99 not to risk a batch). For liquid yeast use the whole thing.
 
Fermentis recommend pitching 100 grams/lh, or 1 g/l. There are about 9 liters is about 2.5 gallons. So, you should pitch 9 grams of yeast. A single sachet of US-05 contains 11.5 grams of yeast. If you pitch the whole sachet, you will probably have better beer than if you only pitched half.

I usually ignore this recommendation because yeast isn't cheap and I haven't moved to all-grain. US-05 seems to handle underpitching well.

You know if you REALLY want to save yeast, you can dive headlong into yeast washing.

I know someone that pitches their next wort onto the trub from their previous wort. I don't personally want to dance with that idea, but seems to work for them.
 
I would be using dry yeast. I got a 11.5g of safale 04. Just wondered what was best for a 2.5gal batch. I rehydrate my yeast now as well. Cheers for the input people
