Hey all,

I am relatively new to all grain brewing. I have brewed about 8 or 9 batches so far. I have purchased some bulk 2-row and white wheat malt from a local distributor. For this reason I am looking for a good American Wheat Beer recipe.

I have tried a 40% wheat 60% 2-row recipe with varying hops additions.

it looks something like this:

5.5# 2-row barley 60%
3.5# white wheat 40%
1 oz ~5.5% AAU hops addition (60 min)
1 oz ~5.5% AAU hops addition (15 min)
tspn irish moss (15 min)
Wyeast 1010

Mash at 154 for 60 min
1.5 q/lb mash water
90 min boil

I have only ever used one type of hops per batch. Does anyone have any suggestions for modifications or hop schedules?

Go with 1oz of saaz @ 60mn boil. Split up last 1 oz 1/2 oz at 15 then 1/2 oz 1mn for aroma. Try some citrus addition too at 5mns to add some depth.

Sounds good. if you have trouble finding Saaz, which i have before, sterlings work well too. Coriander and orange peel are always good. Maybe even ginger instead of orange peel.
 
Just be easy on ginger if you do use it. I just made a batch with too much ginger and it doesn't taste too well is all I gotta say. Lol
 
I've used a similar recipe, everyone who's tried it has begged me to make some for them.

4 lbs White Wheat
4 lbs 2-Row
1 oz Williamette @ 60
1oz Cascade @ 15
3 lbs Wildflower Honey @ 2

Edit: I also used US-05 yeast. I went with 2 weeks @ 65, bottled with Cooper's Carb Drops, and was drinking it at the end of week 3. Definitely need to use a blowoff tube for this!
 
I do a similar recipe too:

2.5 gallon batch
2 lbs 2 row
2 lbs white wheat malt
8 oz. flaked wheat
.5 oz. Hallertau (60 min.)
US-05 yeast

Comes out clean and clear. Crisp, smooth, and refreshing with a nice malty/grainy aftertaste.
