I haven't posted here in a while as I took a break from brewing. The reasons were varied, but one of them was that I wasn't having great success with some of my brews.
Tonight I decided I wanted to open one of the last of my Stone Ruination IPA clones that I made back in August. It was absolutely perfect!!! It tasted just like the real thing after 4 months in the bottle. When I first started drinking it they were a little flat, but the carbonation developed after a good month+. They always tasted pretty good, but it was never that same taste as the Ruination. Everything came together after these 4 months. The dry hopping aroma, the carbonation, the sensory feeling in the mouth. And best of all, it was in a Stone Ruination 22oz Bottle. (No, I didn't mistakenly put a real one in the fridge.)
I still have a few bottles of even earlier beers that I made, in particular my lager from the spring. I'll have to give that one another try.
I'm going to get brewing again, so maybe by this spring I'll have something really good to taste, just in time for cycling season to start again.
