Do you *have* to use an enamel/stainless steel pot or can you use an aluminum one with no negative effects? Or even better, a Magnalite pot?

Back where I'm from you can't call yourself a chef if you don't have a set of Magnalite..and I do. :D
 
there is a myth that using aluminum pots causes Alzheimer's. this is untrue. you get more aluminum in an antacid than you do in your wort. use what ever pot works best for you.
 
LOL if that were the case Alzheimer's would be epidemic in south Louisiana...of course, my great grandmother and to a lesser extent, my grandmother both had alzheimers...hmm.
