I just got a stainless steel wort chiller. Is there anything that I should do to take care of it, like disconnect the hoses to let them and the coil dry out?

Id maybe turn it upside down to drain the water, but it is SS, it is going to last forever and be LOW maintenance! Good choice!
 
Try to clean it right after you use it, and it'll be virtually maintenance free. +1 To Pol's advice, I live in Chicago as well, and any water left in the coils WILL freeze and damage the tube.....
 
Yeah, if you have an air compressor, blow out the water with that. Or take a deep breath and pretend your chiller is a waterlogged tuba............
