Wine kit taste ?

So I don’t know how to describe it and I’m sorry if I sound like an idiot but here it goes....
This is only my second attempt at making wine from a juice kit (Mosti Mondiale). This last batch was a Chianti. I tasted it toward the end of secondary fermentation and it tasted pretty good. However, after adding all the fining agents and letting it clear for 14 days it ended up having the same taste and smell then the last batch of Malbec I made a couple of months ago. It’s weird. I don’t know how to describe the smell and taste but it’s “off”. It doesn’t taste like the commercial Chianti. Is it a malic acid thing? I degassed it with drill and wand. Added all the required finishing agents and it has the same taste and smell I ended up with in the Malbec I made. Does anyone know what I might be talking about?
