So we brewed a little over a week ago, Stone Vertical Epic 9-9-9. Long story short, a hydrometer tube filled from the boil kettle was left on the brewery counter. This is before we pitched yeast. Any way it fermented with wild yeast. OG 1.080 FG with wild yeast 1.022. Tast? A little earthy a little sharp but good. Hmmmm I wonder what strain is floating around my brewery?
 
Cultivate it! Then try it out in larger pilot batch to see how it works out. I tried that before with horrible results. But that was West Texas. Hoping to grab some from over here, specifically in Belgium and see what I can make.
