White IPA... with or without Brett.

Hey HBT,
I'm a new home brewer with 4 brews under my belt and I'm seeking some input on a recipe I'm throwing together. I'd like to brew a White IPA inspired by Anchorage Brewery's "Rondy Brew". If it's available in your area, I highly recommend you grab some. It's hotter than Swayze.

So here's the idea...

7.5 lbs Alexander Wheat Extract
1 lb pale malt
1 lb flaked wheat

Steep grains for 30 min @ 160
Add Extract and 1 oz of zythos hops @60
@40 add 1 oz cascade hops
@10 .5oz coriander(crushed), .25 oz grains of paradise(crushed), 1oz bitter orange, 1oz sweet orange.
@5 add .25 oz cascade and .25 oz zythos
After 60 min boil is done, add 1 lb of wildflower honey to the hot wort
Pitch WLP400 @ 70

What do you think about this recipe? Would it have potential? Things I should substitute/exclude. I'm thinking of pitching some "brett" into secondary, as well. Any thoughts or suggestions would be greatly appreciated.

Is the point of adding the pale malt and flaked wheat to add fermentables, because if it is then you'll have to mash those. Keeping them at 160 for 30min might convert them a little, but most of what you'll extract is protein and unfermentable dextrins, which will definitely add some body to the beer, which the honey would then thin out. However, although I've not used Alexander extract, more than likely its already got plenty of dextrins in it already, so you'll probably want to mash the grains. Rather than keeping them at 160 for 30 min, keep them at 155 for 60 min and you should be good to go.

The rest of the recipe looks like it would be pretty tasty. I've not used grains of paradise, but you seem to have a restrained set of spicing additions, which is generally how I like to start. Sadly I've not had Rondy Brew yet so I can't say how it looks as far as a clone, but it doesn't sound like a bad beer you've got planned out. The Brett is really up to you. Plan on tasting it periodically after you add the Brett so you can figure out the point you want to bottle/keg, and make sure to use some sturdy bottles if you decide to bottle early on in the Brett, since it can continue to ferment the longer chain sugars that Sacc can't ferment (like you'd get from steeping the pale malt). Hate to see bottles start to blow!
 
Thanks for the info. I was going to use a Belgian Wit recipe that I got from my brew store and add different hops and spices to give it more of an IPA flavor. The directions call for a 30 min steep, so that's why it was in my plan, but I'll take your advice and leave in for longer. There's no way that I could replicate Rondy Brew, as its fermented in oak wine barrels and bottled with Brett (which I'm not willing to risk), it's just what inspired me. I'll just do my own thing and hope for the best. Maybe I'll just leave the Brett out of it for this batch.. Sounds like its pretty fickle and out of my skill set for now. I'll keep it simple. Thanks for the advice.

I'd add the 40 min Cascades @ 20 mins...you won't get any flavor out of them at 40. And I'd add the spices @ 5 just to keep it simple...no real reason to add them at 10 vs 5. I'd also up the 5 min Cascades to a full oz and dry hop with a couple oz Cascades as well.

If you can get ahold of it, try the Deschutes Chain Breaker White IPA, very good representation of the style.
 
Are you thinking of Galaxy White IPA from Anchorgage? Rondy Brew is a saison, brewed with East Kent Goldings, peppercorns, and brett. There is some good information on Anchorage on Embrace the Funk and there is an interview with Gabe Fletcher on Sunday Session.
 
Thought I'd give you guys an update on the brew..

I transferred it to secondary a couple days ago and I'm dry hopping with .25 oz of Zythos and 1 oz of cascade. I decided to save the Brett for a different batch. I tried a sample today and Wow... so far it's fantastic. It tastes like a little spicier, grapefruitier (not a word, I know) than Chainbreaker and has a similar color. I think the grains of paradise were a great "nasal" addition. Although beersmith only has it as 25.5 IBU's, it tastes like more and the color is also lighter than BS predicted.

As far as the Rondy Brew White IPA, it definitely exists (www.ratebeer.com/beer/anchorage-2013-rondy-brew-white-ipa/200340). I'm drinking one as I type. I think Gabe only distributes locally though.

I wish you would've tried the Brett. I'm gonna attempt a Bittermonk clone in a few months. Woulda been cool to see how yours turned out with it. Oh well!

Yes... Anchorage Brew never disappoints. Gabe is the man. Galaxy and Rondy White are two of favorite IPAs, hands down.
