does anybody know what would happen if one were to add a hefeweizen style yeast to wort made from (non-wheat) DME?
would it still ferment? would it change the taste (in a bad way)? would it alter the expected gravity of the recipe?
 
I asked this a while back and did not get the reply I was hoping for. I have a lot of WLP380 yeast around - I may just pitch a batch of Light ME, honey and see what happens.
 
It will ferment, the taste will be different, gravity depends on total sugars, ditto ABV.

Taste better/worst? You'll have to try it. Most of the Hefe flavors are in the yeast, just like Belgians. Worst case, you'll have a blonde.

Don't forget to post the results, good or bad.
