Wheat Stout - Recipe ideas/help

Hello All,

I've got 12 brews under my belt (including 3 AG), and I'd like to start experimenting a little bit. I'd like to try and make a wheat stout, but I have no clue where to even start, and finding a recipe has been extremely difficult, so I slopped together my best (nearly uneducated) guess. Any ideas for me?

Recipe Type: All Grain
Yeast: WLP300 Hefeweizen Ale Yeast
Batch Size (Gallons): 5
Original Gravity: 1.086
Final Gravity: 1.022
ABV: 8.2%
IBU: 33.6
Boiling Time (Minutes): 60
Color: 31.4
Primary Fermentation (# of Days & Temp): 3 days @ 62F, 3.5 weeks @ 68F
Additional Fermentation: None
Secondary Fermentation (# of Days & Temp): None

8lb. 2-row US 48%
6 lb. Dark Wheat malt 36%
12 oz. Chocolate malt 4%
12 oz. Crystal 120L 4%
8 oz. Cara-pils 3%
1 oz Chinook hops (bittering, 13% AA, 34.2 IBU)
2 oz Cascade hops (aroma, 6% AA, 0 IBU)

Mash @ 157F, 1.25 qts/Lb. grain
Sparge @ 169F 1/2 gal/Lb. grain

60 min. boil:
1 oz Chinook for 60 mins
2 oz Cascade at flameout


I'm open to any and all suggestions. I'm not quite sure that I want this to be the monster brew I've made it. Have at it!

I know that AHS has a recipe for a wheat stout. You may want to look at their website to get a perspective on grains and gravities. You can never go wrong with a big stout though. :mug:
 
I saw that, but they don't say the amount that they use for each grain. :mad: I really enjoy a strong stout, but I haven't ever brewed something that big, so I'm afraid that I'm going to be boiling all day to hit my OG.
 
This schwartzweizen recipe came out of a magazine (All About Beer, I think) but I haven't gotten around to making it yet. It might help you out with a starting point. This is a 5 gallon batch:

5lb pilsner
2lb munich
2 lb flaked wheat
1lb carafa III
Mash 1 hour at 158

Boil additions:
1.25oz Pearle (8%) at 60 min for 35.2 IBU
0.5oz Saaz (4%) at 10 min for 2.6 IBU

Ferment with a neutral or stout strain.
 
Maybe something along the lines of:

50% Wheat
30% Pale
10% Midnight Wheat
5% Crystal
5% Roasted Barley

Clean bittering hop
Willamette for flavor/aroma

London Ale yeast
