So i was trying to make a hefeweissen from a Jamil recipe which calls for 50/50 wheat/pilsen LME, and for the first time i noticed on the back of the Briess container for the CBW® Bavarian Wheat LME that the ingredients are "wheat malt and barley malt extract".
Since authentic hefeweissens are supposed to be at minimum 50% wheat, i was wondering if anyone knows how much barley malt is in the wheat malt extract. Safe to assume it's miniscule?
Think 60% wheat LME and 40% Pilsen would probably keep me from trashing german beer law and dipping below the 1/2 wheat line?
