Wheat beer off taste

I like wheat beers, but mine seem to have an off taste. I do all grain, and my efficiency has gone up alot since I stared maybe two years ago. Used to add a little extra base malt, but not anymore, and I still get higher efficiency. I grind my own grain, and for the wheat I do a double to triple grind. Recipies are basically german pils and wheat. No infections during fermenting, sample tastes fine. Two weeks in the bottle they were awesome, fresh wheat beer taste. Three weeks and they have an off taste. Hard to describe, not an infection taste, almost metallic, not bitter like hops. Last 4 batches had this. Ales dont have this problem. I do notice my ales are more malty sweet, not enough hop balance maybe due to the higher eficiency? The wheats just dont have that sweet bread in a bottle taste.
