Hi All,

I've been looking through the forum and am getting a little confused.

I'm brewing a wheat beer with Wyeast 3068.

In the brewing for beginners book, the recipe states, leave in primary for 10 days and then condition at 12degC (53f) for 4 weeks.

If racking to bottles, would the beer carb whilst conditioning?
I thought conditioning and carbonation were/should be done in separate stages?

That seems a bit off 3068 likes the mid 60s. That seems like its for a lager yeast. Closer to 60 will get your more clove, closer to 70 more banana.

It definitely does not need 4 weeks. Most things Id be making with that yeast (hefe or dunkel) would easily be ready for bottling in 3 weeks or less

The beer will carb while it conditions provided you add adequate amount fo carbing sugar. Use a priming calculator online. You can do conditioning in the fermentor, but it will need conditioning after bottling and carbing anyway

in my opinion hefes should be bottle conditioned. I had good luck with 3068 @ 68°F. give it 2-3 weeks in primary, then bottle.
I use the priming calculator @ brewersfriend.
make sure you know the actual volume you'll be bottling. if it's a 5 gal batch, you'll only bottle around 4.5 gals for instance. hefeweizen should be a bit spritzy, I shoot for 2.8 volumes co2.
after bottling give em 2-3 weeks at room temp to fully carb.

Thats awesome thanks guys!!

I'll post a picture up when its done!

Been in the primary about 10 days so far and the sulphur smell has gone already. I'll follow what you guys have said and fingers crossed it'll turn out great! :rockin:
