Your pre boil gravity is before you boil and your OG is post boil. I take readings of each of the runnings when i batch sparge and every 15 minutes when i fly sparge. I then take a pre boil reading. Your preboil reading will give you an indication if you will hit your OG. If your pre boil is low them you can adjust with DME or with a longer boil.
